Meet your chef

Chef Billy Caruso

Caruso’s culinary journey began at 15, leading him to the Culinary Institute of America in Hyde Park, N.Y. By 21, he had earned a bachelor’s in hotel restaurant management and a Level 2 sommelier certification. He returned to Central Texas, where he expanded his hospitality expertise at III Forks Steakhouse and Paggi House, eventually becoming the chef at Botticelli’s on South Congress in Austin. As Culinary Director and partner at 24 Diner and Easy Tiger, he helped shape Austin's dining scene. Now in Chicago, Caruso continues to impress as executive chef at III Forks Chicago with his innovative steak and seafood dishes.

Reservations are made on a first-come, first-serve basis, and a reservation is not considered confirmed until at least a deposit has been made. Once a reservation has been made, you can work with our concierge or directly with the chef or service provider to fine-tune and customize your event.
